I cooked this strip out on the charcoal grill to just below medium. As usual, I'll let the steak sit before cutting into it. If this were a steak from another outlet, most of its juices would be sitting on the plate. But not this steak. It was all locked inside. None of that mostly dry taste you get from other steaks. This was mouth-watering and full of flavor. My first time cooking up one of Wishbone Heritage Farms' steaks. Won't be last.
